The classic Southern hot chicken salad has a new keto-friendly version! You won't miss the crushed potato chip topping thanks to everyone's favorite: bacon!

First, combine the dressing ingredients. Don't worry if the cream cheese still has some lumps: they'll melt  away during baking.

Stir in the almonds, bacon, celery, onions, water chestnuts, Parmesan cheese, and chicken.

Spread the chicken salad mixture in a baking pan or divide between individual baking ramekins. Sprinkle with shredded cheese and bake at 400 F until bubbly, 15-25 minutes depending on the size of the baking dishes..

You can also bake it in zucchini boats.
