Blueberry Lemon Cheesecake Overnight Oats

A fresh and easy recipe you can make ahead for grab-and-go breakfasts and snacks

What You'll Need:

rolled oats

unsweetened almond milk

lemon juice

plain, nonfat Greek yogurt

sweetener of choice

vanilla extract

lemon extract (optional)

fresh blueberries

In a mixing bowl, combine oats, almond milk, lemon juice, sweetener, and extracts. Stir until well combined.

The lemon extract is optional but it really adds more flavor! You can also  use food-safe essential lemon oil if you prefer.

Divide blueberries between jars, then divide oats mixture on top of the blueberries. Top with additional blueberries.

Garnish with lemon zest if desired.
