Easy and Nutritious Chocolate Peanut Butter Protein Cookies

These soft healthy chocolate peanut butter protein cookies are perfect for breakfast or a snack. This gluten-free recipe has no added sugar and 15 grams of protein per serving.


- Bananas - Egg whites - Rolled oats - THM Baking Blend - Peanut flour - Cocoa powder - Gentle sweet - Vanilla extract - Banana extract - Coconut extract - Baking Powder - Salt - Greek yogurt - Almond milk - Unsweetened coconut    flakes

Mash the bananas into a bowl with a fork until no large chunks are left 

Mix in the rest of the wet ingredients until everything is well blended

Add dry ingredients on top of wet mixture, then stir until combined. Be sure not to over mix! The batter will be thick and sticky

Form the batter into six equal mounds on a baking sheet lined with parchment paper.

Bake the cookies for 10-12 minutes, or until the edges are firm and the tops bounce back when you press on them, then drizzle the glaze on top.
