Easy Keto Green Chile Chicken Enchiladas

You only need four ingredients to make this simple meal!

You can use any tortilla your family prefers. To keep it keto-friendly, use low carb tortillas or egg crepini.  If you aren't watching carbs, use corn or flour tortillas.

What You'll Need:

- shredded rotisserie chicken - salsa verde - pepper jack cheese - low carb tortillas optional toppings: - minced red onion - crumbled cotija cheese - chopped fresh cilantro

Lightly spray a 9x13 pan with avocado oil.

Now spread 1/3 of the salsa verde on the bottom of the pan.

Add one layer of tortillas on top of the chile verde.

Spread half of the shredded chicken over the tortillas.

Sprinkle half of the shredded cheese over the chicken.

Spread 1/3 of the salsa verde over the cheese layer, then repeat all the layers. Bake at 375 for 30 minutes.

If desired, serve with chopped cilantro, minced red onion, minced jalapeno, and crumbled cotija cheese.

Add a green salad to complete this simple and  healthy meal.
