Keto Huli Huli Grilled Chicken

Whether you're hosting a backyard luau or just want to enjoy the flavors of Hawaii, this simple low carb Huli Huli chicken recipe is sure to be a crowd favorite!

The chicken is marinated in a sweet and tangy sauce and then grilled to perfection. "Huli" means turn in Hawaiian, and turning the chicken often is the key to this recipe.

Marinade Ingredients:

– Tomato paste – Apple cider vinegar – Swerve Brown -or- Golden monk fruit  – Onion powder – Garlic powder – Minced garlic – Minced ginger – Soy sauce – Better Than Bouillon Chicken Base – Unsweetened pineapple juice

Whisk together the marinade and remove 1 cup to be used for basting while grilling.

Add skin on, bone-in chicken thighs and stir to coat. Cover and refrigerate to marinade overnight, at least 8 hours.

Grill skin side up over medium high heat (350-425F) with the lid down, then turn the thighs.

Baste, and grill, watching for flare ups, especially when the skin side is down. Continue turning, basting, and grilling until internal temperature reaches 165 degrees F. Let it rest 5 minutes before serving.
