Curved Arrow

Do you have some bananas that are getting a little over ripe? These tasty scones are a great way to use them up!

What You'll Need:

– Bananas – Rolled oats – Oat fiber: NOT oat flour – De-fatted peanut flour – Low carb sweetener – Vanilla extract – Banana extract – Baking powder – Mineral salt – Egg whites  – Plain nonfat Greek yogurt  – Unsweetened almond milk

Oat flour is made by grinding/milling whole oats. It’s a slow-burning, healthy carb source. Oat fiber is made by grinding up the non-digestible oat hull. It’s essentially pure fiber with zero carbs.

Oat Fiber vs. Oat Flour

Ditch the fat by using defatted peanut flour, egg whites, nonfat plain Greek yogurt, and unsweetened almond milk.

Combine all the ingredients and shape into four scones. Bake at 350 degrees F for 12-15 minutes. Then drizzle with a yogurt-based glaze.

You get to enjoy two delicious scones in each serving! Perfect for breakfast or a healthy snack.
