Low Carb Cannoli Cream | THM-S
A low carb, sugar-free treat that tastes like the inside of a cannoli. Perfect to eat by the spoonful or as a dip for berries or other low-carb dippers.

- 1/2 cup 2% cottage cheese
- 2 Tablespoons gentle sweet can substitute any low carb sweetener to taste
- 1/8 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- 1 Tablespoon heavy whipping cream
- 2 Tablespoons Lily's chocolate chips can substitute any sugar-free chocolate chips
Combine cottage cheese and sweetener in a small blender cup or food processor and blend on high speed until smooth. Add cinnamon, vanilla extract and heavy whipping cream and blend on high for 5-10 seconds.
Stir in chocolate chips by hand and serve.
NOTE: Some brands of cottage cheese are wetter than others. If you notice any liquid or whey, be sure to drain that before you blend it. You may want to consider straining it through cheesecloth or a fine mesh strainer for a thicker dip. I've never felt the need to do this with the Daisy cottage cheese.
If you want a thicker dip, you can add several Tablespoons of finely ground almond flour to the cream mixture without it affecting the flavor.
You can add 1 teaspoon of orange zest or 1-2 Tablespoons of chopped pistachios for variation.
