Chocolate Crust

Chocolate Cheesecake Filling

  • 2 Tbsp butter
  • 4 oz unsweetened baking chocolate
  • 8 oz cream cheese, softened can substitute neufchatel cheese
  • 3/4 cup THM Gentle Sweet or equivalent sweetener
  • 1 tsp vanilla extract
  • 1/2 tsp mineral salt
  • 2 Tbsp Irish whiskey can substitute 1 tsp vanilla extract, 1/2 tsp almond extract and 4-1/2 tsp water for a nonalcoholic option
  • 1 cup heavy whipping cream

Irish Whiskey Whipped Cream

  • 1 cup heavy whipping cream
  • 1 Tbsp Irish whiskey can substitute 1/2 tsp vanilla extract and 1/4 tsp almond extract for a nonalcoholic option
  • 1 Tbsp THM Gentle Sweet or equivalent sweetener
  • 1 tsp vanilla extract


Chocolate Crust

  • Melt butter in a small saucepan over medium heat. Remove from heat and set aside.
  • Combine dry ingredients in a small bowl, then add melted butter. Use a fork to mix together until butter is worked throughout the dry ingredients.
  • Set aside 2 Tbsp of the mixture to be used as garnish.
  • Divide topping evenly among 8 glass jars (8 oz. mason jars are the perfect size) or ramekins. Approximately 1.5 Tbsp per container. Tamp down the topping to form a crust with the back of a spoon or a muddler.

Chocolate Cheesecake Filling

  • In the same saucepan, melt 2 Tbsp of butter of medium heat, then add 4 oz. of unsweetened chocolate broken into squares. Reduce heat to low and stir until chocolate is completely melted. Remove from heat and set aside.
  • In a large bowl, beat heavy whipping cream until soft peaks form. Set aside.
  • In another mixing bowl, beat together softened cream cheese and sweetener until light and fluffy. Add vanilla extract, whiskey, and salt and beat until combined. Add the melted chocolate and beat until completely blended.
  • Gently fold whipped cream into the chocolate cheesecake mixture by hand until well combined.
  • Divide chocolate cheesecake filling equally between the containers. You can either spoon it in, or I find it easiest to spoon the filling into a gallon Ziploc bag and pipe it into the containers through a large hole cut in the bottom corner of the bag.
  • Cover containers and for best results, chill at least four hours before serving.

Irish Whiskey Whipped Cream

  • You can prepare the topping just before serving, or prepare it ahead and refrigerate it until you're ready to serve the dessert.
    In a large mixing bowl, beat heavy whipping cream until stiff peaks form. Add whiskey, sweetener, and vanilla extract and blend in completely.
  • Equally divide the whipped topping between the six cups. Either spoon the topping over the cups, or use a decorative dispenser with a star tip.
  • Garnish each cheesecake cup with a sprinkle of the reserved chocolate crust crumbs.
