Nearly every August when I was growing up my family would go to the local peach festival.
We’d get to enjoy peach cider, fresh peach ice cream, peach pie, and sample peach preserves.
Of course, we’d come home with bags of fresh peaches, and my mom would whip up one of my favorites: peach cake.
I look forward to peach season every year, and love that it arrives well before August now that I live in North Carolina!

I’m not proud of the fact that the first time I ever had too much to drink it was peach schnapps…
Fortunately, it wasn’t enough to ruin the flavor of one of my favorite fruits!
In fact, I even used it in my peach sangria recipe.

Welcome to our Virtual Dinner Club!

We joined up with four of our blogging friends to create a virtual “dinner” club back at the beginning of 2021.
Each month we invite a guest host to join in our fun.
This month, Coco from The Crowned Goat is joining us and we know you’ll love her too! She’s in the same season of life as AnnMarie and me, and loves sharing all sorts of great DIY projects, decorating ideas, crafts, and recipes from her beautiful island cottage in Florida.
Every month we choose a new theme, and even though we call ourselves a dinner club, we’ve shared ideas for breakfasts, brunches, luncheons, and cocktail parties too.
First, we all share ideas to create a tablescape for that theme, then we each share a recipe for the theme to create an entire menu.
Think of it as a virtual progressive meal.
It’s so much fun!
One of these days we’re going to manage to have one of these dinner club get togethers in person.

This month our theme is Peaches
When our friend Stacy suggested this theme, I was so excited!
There’s something about their sweet and tart juiciness that pairs beautifully with so many foods.
I couldn’t wait to see what everyone would come up with to decorate their tables using the phrase “just peachy” as inspiration and then try all the recipes.
Our friends did not disappoint!

The big joke our friend Rachel always says about her cooking is if she’s making it, you know it’s going to be easy!
Over the years I’ve found that it’s also going to be delicious.
Her simple appetizer, Sweet & Savory Fresh Peach Bruschetta with Goat Cheese, looks beautiful and I can report it tastes amazing!
As soon as I saw it, I had to give it a try.
The drizzle of balsamic glaze over the peaches and goat cheese is divine. You’ve got to make it yourself!
Easy and Refreshing Peach Sangria | Simply2Moms

When I found out that our dish for this month was a peachy cocktail, I had so many ideas!
Peach margaritas or daiquiries?
Or maybe peach mojitos?
And then I considered trying a peach bourbon cocktail.
Ultimately, I wanted to keep things really simple and came up with this Easy and Refreshing Peach Sangria featuring a sparkling bellini wine we tried while visiting Olde Tyme Marketplace in Indiana.

I’ve loved salsas made with fruit, and this one adds some creamy avocado to the mix.
I have all the ingredients on my shopping list and can’t wait to make it next week!
Who says tasty recipes like this have to be reserved for dinner parties?!
