This low carb keto mojito recipe is a twist on the traditional Cuban drink featuring rum, lime, and fresh mint.

Wait.
That may require three hands…

Let’s get real here: I enjoy my adult beverages.
And when I read the Trim Healthy Mama plan book and they said that I could enjoy wine (the kind with low sugar content like Prosecco, dry whites, and red wine) and still be on plan, I knew I’d found a lifestyle I could live with.
Because sometimes this simple mom just really wants a glass of wine.
Or two.
I’m not a big beer drinker, so I wasn’t really bothered by the recommendation to avoid beer (it’s really too high in carbohydrates).
Of course, if I’m eating Maryland steamed crabs with tons of Old Bay Seasoning all bets are off and there WILL be a beer in my messy hands.

But that only happens once or twice a year. If I’m lucky. And now I’m craving some crabs!
Have you ever had Maryland steamed crabs? They’re so good!
But what about margaritas? And mojitos? Was I going to need to say goodbye to my favorite mixed drinks too?
A quick google search gave me a little hope: spirits (e.g. vodka, tequila, rum, whiskey, and gin) have zero carbs.
Zero carbs.
That’s right, Zero Carbs.
Zero.
Carbs!
Of course, there are still calories so don’t go totally crazy and have a free-for-all with the spirits.
Moderation is the key in all things, y’all.
So the challenge became how to make some of my favorite mixed beverages without those sugary syrups and fruit juices.
I decided to start my efforts by making a keto mojito.

Place 5 large mint leaves and wedges from half a lime in a 16-ounce glass.

Use a muddler or a wooden spoon to muddle the mint and lime together. (Muddling is basically crushing and grinding, similar to what you would do with a mortar and pestle)
Muddling releases the oils in the mint leaves and lime peel, plus the juice of the lime to intensify their flavors.
I prefer using the flat end of my muddler when I make a keto mojito, otherwise, the mint gets all stuck in the grooves!
If you don’t have a muddler, no worries! Just use a wooden spoon.

Add 2 ounces of rum and 1 ounce of unsweetened lime juice to your glass and give it a little stir to get the mint oils into the liquids.

Add ice to your glass and then add chilled club soda or seltzer water to fill the glass.
Carefully stir in 1 teaspoon of Pyure sweetener. I’ve learned that the best time to add the sweetener is AFTER you’ve added the seltzer water!
If you don’t have Pyure on hand, here’s a sweetener conversion chart to figure out how much sweetener to use.
Some seltzers have sodium in them. And if you add the sweetener and then pour the seltzer over top, it bubbles up like a volcano and you’ll waste part of your drink make a mess.
Let’s all have a moment of silence for all the mojitos I’ve lost while learning this lesson. ?

To make things fancy, garnish with a small sprig of mint and a wedge of lime.
Doesn’t that look pretty? And refreshing?
