One of my biggest frustrations with low carb baking is converting sweeteners. It seems that every low carb recipe uses a different sweetener, and often not the ones I have on hand! And every low carb sweetener conversion chart uses just one sweetener (typically sugar) as the base.

But what if the recipe I want to make calls for THM Gentle Sweet and all I have on hand is Pyure?

That means I end up having to do the math. And I’m not particularly good at math. It makes my head hurt and my brain shut down.

Seriously.

So with the help of my wonderful husband, I created a set of conversion tables that lets me easily convert one sweetener to another with no calculator required! And I want to share them with you.

Be Mindful When Making Conversions

One important note about converting sweeteners for baking. Baking is truly a science. Recipes are created based on a certain amount of volume and a wet to dry ingredient ratio. So depending on the sweeteners you may need to compensate for these changes.

The charts below are converting so that you have the same amount of sweetness in your recipe. But let’s say the recipe calls for 1 cup of a sweetener and the conversion calls for just 3 Tablespoons, you’ll need to add some bulk in a different way.  Generally, you’d use more of the flour called for in the recipe. If you’re going in the opposite direction (recipe calls for 3 Tablespoons and you’re adding 1 cup), you’ll need to add more liquid.

The bottom line that you need to remember when converting sweeteners is that it may change how the recipe turns out. If you’re not happy with the finished product, don’t give up on a particular recipe! Just try it with the exact ingredients used by the recipe’s creator, or make adjustments to make it more wet or dry (based on what seems off).

  1. Thank you so much! This is awesome! I often get excited by a certain recipe, but then realize it calls for a sweetener I don’t have, and won’t have. And have had a few yucky tasting products from before I knew there was a difference so have been pretty gun-shy about trying new recipes. This will help immensely I’m sure!

  2. This post popped up on Pinterest tonight. Awesome! This is a much needed chart. Thank you for doing this. My brain hurts when I do math too. 😁. I subscribed to your blog and then tried the printable version. I tried twice and never received email. The only email I received was the first one about subscribing. Could you email me the printable version when convenient for you? Thank you! Happy New Year!

    • Hey Daylene! I’m so glad that you found this chart helpful! We have been having some technical difficulties with getting things mailed out properly. Technical difficulties give me headaches just like math! LOL I will email it to you tonight! We sure do appreciate you being part of our growing community!

    • Hi Dawn! Thanks for reaching out! This one is super easy! Both Xylitol and Swerve measure cup for cup with sugar so there’s no conversion necessary. You can use the same amount of Swerve that the recipe calls for of xylitol. 🙂

    • Hey Liz! I’m so sorry that the download wasn’t working properly. I’ve e-mailed the chart to you directly. Thank you for being part of Simply2Moms!

    • Hi Sabrina! You should have received an email that includes a link to our VIP Printables. The Conversion Chart is one of the printables. I’ll email you the link again just in case it didn’t come through!

  3. Absolute genius. I’ve tried creating spreadsheets similar to these, but never thought it out as well as you have. I signed up for newletter, but never got the notfication to reply. Checked out a few of your links. Don’t like washing dishes either. Feeling far less guilty. Thanks.
