Our family loves to go to the early service on Easter morning, and there’s nothing better than coming home and having brunch!
In fact, brunch food is some of my favorite food.
So when our monthly dinner club started talking about this month’s theme, we all agreed an Easter brunch would be so much fun.

Appetizer: Caramelized Pear Flatbread

Our friend Stacy from Bricks’n’Blooms is Italian and she always has some delicious recipes!
This Caramelized Pear Flatbread sounds amazing, don’t you think?
What a wonderful way to start a meal with friends!
I think I’ll use a crust made from mozzarella cheese like this one as the base when I make this recipe.
Cocktail: Grapefruit Mimosas

We both love a good mimosa, and this recipe for Grapefruit Mimosas from our friend Rachel and The Ponds Farmhouse sounds wonderful!
Not to mention, isn’t it pretty?
It’s the perfect cocktail for an Easter brunch.
Use fresh-squeezed grapefruit juice sweetened with your favorite low-carb sweetener to keep the carb count low for this yummy cocktail.
Main Course: Veggie Brunch Quiche

When I think of brunch, one dish that always pops into my head is quiche.
Our friend Michele from Vintage Home Designs is sharing a recipe filled with veggies (after all they’re in the name!)

You can make this recipe with a keto crust, or skip the crust altogether if you’re a Trim Healthy Mama.
Side Dish: Cheesy Hashbrown Casserole

One of my favorite breakfast foods at Cracker Barrel (besides bacon!) is their hashbrown casserole.
Our friend Jen from Midwest Life and Style is sharing a delicious Cheesy Hashbrown Casserole recipe that reminds me of that delicious dish!
If you follow a low-carb lifestyle, you can easily swap diced cauliflower for the potatoes.

Your menu looks and sounds wonderful, My mouth is watatering, but I’d just like to suggest a few additions for Easter/Spring symbolism, perhaps to add next year or even suggest as additions: Hot Cross Buns, Pickled Eggs with the beets included or omitted at the table, and a salad perhaps with fresh asparagus, to bring more bright greens & some tang! The buns are a fun activity with children of all ages! The eggs are great long after Easter. I buy them year round at my grocery store for lunch! As always, your ideas are over the top! Love, Mom
