Hey there! We are back with another What’s On My Plate meal inspiration post for you. Sometimes I get in a rut with what to eat and I’m sure some of you may too, so our hope is to help give you some new ideas with our WOMP series.
Let’s see what my meals looked like in one day…
Our last What’s On My Plate (WOMP) post shared quick easy meals. Anne showed us that you don’t have to use special ingredients to follow the Trim Healthy Mama way of eating. As I was putting my photos together today to write this post, I realized that the meals I’m sharing with you are also simple meals without any special ingredients. Yay for easy!
Breakfast | THM S
Today’s breakfast was fried eggs with some sauteed spinach, which I cooked with a little coconut oil. I also heated up a couple of pieces of bacon left over from the weekend. Easy, delicious and no special ingredients.
Lunch | THM E
Most nights we have leftovers after dinner which makes lunch easy for me the next day. I finally made Anne’s favorite brown rice & chicken recipe in our Instant Pot for dinner last night. You can find the recipe in her post here We also had steamed mixed vegetables (broccoli, carrots & cauliflower). I just threw both in a bowl and heated it up for two minutes and I had a quick healthy meal for lunch. And guess what…no special ingredients. 👍
Dinner | THM FP
This chicken noodle soup is so easy to throw together in the Instant Pot. While we cooked the chicken breasts we cut up carrots, celery, and onion. Once the chicken was done we shredded it, threw it back in the pot with the veggies. Added chicken broth and spices and cooked a bit longer.
I would consider this meal a fuel pull (FP) since there was so little fat as we used all white meat chicken. And since you can have up to a 1/2 cup of carrots (if you have more than a 1/2 cup then this would be an E meal) I think it’s safe to say this was a FP meal. And say it with me…no special ingredients. 😂
Snack | S Meal
After a light dinner, I was a little hungry so I grabbed a snack. A small handful of almonds and Lily’s chocolate chips hit the spot for a sweet & salty snack. Lily’s chocolate chips can be found in some grocery stores. You can buy them online here if you can’t find them in your store. Is that considered a special ingredient? I don’t think so. But maybe a little. 😉
