A Day of THM Meal Ideas
Breakfast – E Meal
I try to incorporate 5-7 E meals per week. The Berry Creamy Grains from the original Trim Healthy Mama cookbook was perfect for a cool fall morning. I used old-fashioned oats and fresh strawberries in my oatmeal. Keeping my salted oolong tea recipe (also from the THM cookbook) lighter using almond milk rather than 1/2&1/2. I skipped the whey protein powder in my tea since I added some to my oatmeal.
Lunch – S Meal
Lunch today is one of my favorite meals! Leftover grilled chicken added to romaine lettuce with a bit of shredded parmesan cheese makes a delicious chicken caesar salad. But the best part of this meal is the homemade caesar dressing. It’s so good! Seriously better than any restaurant. The recipe is from one of my favorite THM food bloggers Joy Filled Eats. I keep the dressing lighter by choosing to use non fat greek yogurt rather than sour cream. I also add about an 1/8 of a cup of water to the caesar dressing recipe…then just refrigerate in a mason jar.
Dinner – S Meal
I’m all about easy meal prep! This one is so simple to throw together & loved by everyone in my family. So, definitely a win for us! Easy Cheesy Bacon Chicken is another recipe from Joy Filled Eats. I only use 4 ingredients…chicken tenders, Wildtree memphis dry rub, bacon and shredded cheddar cheese. Green beans with a bit of butter is an easy side dish. For my teens, I add baked potatoes to their plates and dinner is served!
Snack – S Meal
In the evening while watching tv or more likely writing blog posts…I will often have a snack. Muffin In A Mug packets are a quick simple snack to make. Topped with a few raspberries it’s a delicious sugar free treat.
