Somehow it feels like we’ve skipped over fall and gone right to winter in North Carolina! Of course I’m talking about a North Carolina winter, not a Minnesota winter… 😉 Our temps have been down into the 40s at night and only into the 50s during the day. So I’ve been craving some different foods. Welcome to What’s On My Plate Wednesday, Anne style, with some healthy meal ideas for cool temperatures.
Healthy Meal Ideas for Trim Healthy Mama
Breakfast – THM – E
Breakfast yesterday morning featured a bunch of veggies mixed into some egg whites topped with a sprinkle of shredded Parmesan cheese. I had two slices of sprouted toast with one wedge of light laughing cow cheese spread between them.
My mug is featuring one of my absolute favorite cold weather drinks: Crio Bru.
What is Crio Bru, you ask? It is roasted, ground cocoa beans! You can brew it in a coffee pot, but I prefer steeping it like tea or using a French press for a stronger chocolate-y flavor.
It doesn’t taste quite like hot cocoa. It’s much more of an intense chocolate flavor. You can add sweetener to it and then cream or half and half or almond milk for a creamier texture. Yesterday I also added a few drops of peppermint extract!
The carbs for this E meal come from the sprouted toast. There is less than 5 grams of fat that come from:
- a spritz of avocado oil to cook my egg whites and veggies – 0 grams
- 2 teaspoons shredded Parmesan cheese – 1 gram
- 1 wedge of light laughing cow cheese – 1.5 grams
- 1 Tbsp half and half – 1.5 grams
Lunch – THM – S
Lunch was on the run yesterday and I stopped in at Chipotle for a salad. I guess that’s not really “cold weather” food, but it’s what I was in the mood for! I asked for extra lettuce and topped it with chicken, pico de galo, shredded cheese, a drizzle of sour cream and guacamole.
This is a heavy S meal because the only carbs are from non-starchy veggies. But there is a good amount of fat from the guacamole, cheese and sour cream.
Dinner – THM – E
Dinner was one of my family’s favorite E recipes from the first Trim Healthy Mama cookbook: Cowboy Grub. It’s basically chili, but it has brown rice mixed in for some additional healthy carbs.
I like eating my Cowboy Grub on top of a big bed of lettuce. It gives me extra non-starchy veggies, and helps me to feel full. Otherwise I’d be tempted to have a larger serving of the Grub which might put me over the 45 net carb limit for E meals. But my husband and son usually eat a large bowl or two. And my girls like to top theirs with cheese.
This is an E meal for me because of the healthy carbs in the brown rice, corn, and beans. I used 98% lean ground turkey so there is virtually no fat. I could probably have added a small sprinkle of shredded cheddar cheese and stayed under the 5 grams of fat, but decided to skip it since I’d had a lot of fat at lunch.
Snack – THM – S
Dinner was on the early side yesterday and this is the busy season for my photography business. Unfortunately that means late bed times for me! So I treated myself to a cinnamon roll muffin in a mug around 9:30. I used the recipe in the THM cookbook and topped it with some plain nonfat Greek yogurt mixed with some vanilla and sweetener.
This is an S meal because there are virtually no carbs. The fat comes from the coconut oil and the egg used to make the muffin.
