Hey there! Can you believe Thanksgiving is next week? I am busy getting ready for a visit from my family. They are coming to stay with us over the long holiday weekend. We can’t wait to spend Thanksgiving with them this year. Despite this being a busy time of year, I continue to follow my healthy eating lifestyle with THM (Trim Healty Mama).
Today I’m sharing a day of E meals with you for this edition of What’s On My Plate. I generally try to eat 5-7 E meals each week. But lately I’ve seen the scale moving up a bit, so I thought I’d try something different and incorporate more E meals. I’ve recently learned that healthy carbs may be more helpful for me because I have hypothyroidism. I’m just hoping adding more E meals in my week will get the scale moving back down! Fingers crossed!
What’s On My Plate – A Day Of E Meals
Breakfast – Kefir Smoothie
Want to know the truth? Kefir scared me! I was nervous to try it. I actually bought it several times and threw it away after it sat in my refrigerator so long that it expired. Finally, after some convincing from Anne I tried it in a smoothie. OMG… game changer… it’s so good. I now alternate between this fruit smoothie and a chocolate secret big boy in the mornings.
To make this smoothie I blend the following in my nutribullet:
- 1 cup kefir
- 1/2 tsp vanilla
- 1/2 scoop THM collegian (I use the scoop that comes in the bag)
- 3/4 cup frozen berry mix (strawberries, rasperries & blackberries)
- 1/2 small banana
- 1/2 scoop THM whey protein powder
- 2 tsp THM baboa boost
- 1 cup ice
Lunch – Turkey Sandwich and Yogurt
My favorite sprouted bread is the Silver Hills brand. I buy it at Target…it’s so good! A turkey sandwich on toasted sprouted bread with a wedge of laughing cow cheese spread and lettuce is an easy E meal. I also added a chocolate Oikos Triple Zero yogurt topped with sliced strawberries to my lunch.
Dinner – Cowboy Grub
Cowboy Grub was one of the first recipes I made out of the Trim Healthy Mama cookbook when I started this plan. I was surprised how full of flavor this meal was and it confirmed that I could stick to this way of eating. Growing up I ate chili over a bed of rice so this was reminiscent of that childhood meal but with a lot more veggies. I am constantly surprised at how most recipes I try from the THM cookbooks are full of healthy veggies. Sometimes they are hidden in the recipes and my kids don’t even realize it.
Snack – Banana Cake
Craving something sweet at night when I’m working on blog posts is hard when I’ve been trying to incorporate even more E meals this week. Then I remembered the BAM (Bust A Myth) cake, another recipe from the THM cookbook. I whipped up a batch and Chris & I have been enjoying it for days. I topped it with some plain nonfat greek yogurt mixed with THM supersweet and banana extract. So yummy!
