Do you ever have those days where cooking is the absolute last thing you feel like doing? Where planning meals is on the To Do List, but so are 50 million other things? Me too.
I’m afraid I may have given the wrong impression sometimes. Sure, I like to cook. Some days I really love to cook!
I am busy. My family is busy. Heck, life is busy.
And some days I’m really tired too.
Some days just thinking about what to eat feels like too much work. (Yeesh, talk about first world problems… 🙄)
But that’s one of the things I’ve enjoyed about AnnMarie’s and my What’s On My Plate feature! When I’m having those kinds of days (or weeks), I can take a look at all the ideas we’ve collected here and come up with an entire meal plan for the week. Or I can figure out an easy and healthy meal idea just for the meal in question.
I try to keep certain things stocked in my fridge and pantry all the time so it’s possible to throw meals together.
This day that I’m getting ready to share with you was one of those days. I didn’t really feel like cooking. But I was still hungry! Hangry even… 😜
So here are four easy and healthy meal ideas for YOU!
A Day of Easy and Healthy Meal Ideas
Breakfast | THM-S or Keto-friendly
One of my favorite ways to eat eggs is fried with a semi-firm center. I decided to throw a few pieces of ham in the skillet first. The eggs are topped with my favorite salsa and I had some avocados that were perfectly ripe so obviously, I had to have some of them too! Coffee’s in my mug with some caramel extract and half-and-half.
I can make fried eggs this way in my sleep. They were ready to eat in about the same time it took to run the Keurig two times to fill my mug (it’s a really big mug… 😁).
Lunch | THM-E
There’s only one thing better than a peanut butter sandwich and that’s a CHOCOLATE peanut butter sandwich! I mixed up 3 Tablespoons of defatted peanut flour with 1 Tablespoon of unsweetened cocoa, 1 Tablespoon of Gentle Sweet, a pinch of salt, and enough almond milk to get it to a nice spreading consistency (maybe 1-1/2 Tablespoons?).
Spread that on some sprouted bread and it’s like a little bit of heaven in your mouth.
I’m not kidding.
It’s THAT good.

Snack | THM-S or Keto
Talk about easy and healthy! I keep a bag of broccoli slaw mix in my fridge all the time. Throw it in a bowl and add a little bit of your favorite salad dressing and you’ve got a healthy side!
I also keep cut up veggies ready at all times so I can toss them onto my plate without getting out a cutting board. Because on THOSE days? A cutting board ain’t happening. 😂
Some provolone cheese and sliced pepperoni added some extra flavor and protein. I actually like to stack the cheese and pepperoni on top of a slice of cucumber! 😍 If you’ve never had it that way, give it a try!
Dinner | THM-S or Keto
As soon as the weather starts to warm up, I grill up huge batches of chicken. It’s so nice to be able to have it ready for a quick meal option! I love doing a make-your-own-salad bar for fast dinners. I just pull out all kinds of stuff from the fridge and everyone customizes their own. My girls usually like to add some berries or sliced apples with almonds and sometimes cheese. My husband likes that too, or sometimes he adds tomatoes, bacon and, hard-boiled eggs.
Mine is a delicious Greek-inspired salad. It’s just baby kale on the bottom topped with some grilled chicken, kalamata olives, feta cheese, and sliced red peppers. I dressed it with olive oil, red wine vinegar and a shake of Greek seasoning.
And there you have it! A full day of healthy, quick meals.
