Making Summer Meals Simple
Summertime is in full swing in the Carolinas. I don’t know about you, but the hotter it gets, the less I feel like cooking! In my home, summer means lots of grilling. And salads. And grab and go snacks.
To make it even easier, I plan what we’re having for dinner a week ahead of time so I’m not scrambling to get it made when the kids are getting hungry.

My biggest trick for easy summer keto meals for summer is to grill a lot of meat and veggies at once. That makes lunches and snacks SO SIMPLE! And it also means I don’t have to grill/cook every night.

Easy Summer Keto Meal Ideas
Breakfast
I love this simple keto French Toast in a Bowl recipe. I actually have baggies of the dry ingredients pre-assembled so all I need to do is mix in the wet ingredients. Breakfast is served in under five minutes.
Lunch
Don’t salads topped with berries just scream SUMMER? This one is so easy to throw together. Start by filling a large bowl with spring salad mix or baby spinach. For toppings I used:
- sliced grilled chicken from a few nights earlier
- chopped walnuts
- crumbled goat cheese
- fresh raspberries and blackberries
I dressed it with a healthy drizzle of MCT oil and a Tablespoon of berry-infused balsamic vinegar.
Snack
I keep a large plate filled with sliced veggies in my refrigerator. Not having to cut up veggies at every meal means my whole family is more likely to reach for them too. This simple snack is a staple come summertime.
It’s easy to switch up the type of meat, cheese, and veggies. Sometimes I swap the almonds for some olives. Throw in some pickled okra or dill pickles for variety.
Bottom line? This is great for a snack or lunch or even dinner. And it’s super portable.
Dinner
Grilled meat plus grilled veggies. This is what’s for dinner 80% of the time during the summer in my home. I’ll often add corn on the cob or fresh fruit for my husband and kids.
Make double (or triple!) the meat and veggies your family would eat at a single meal and you’ve just made the rest of your week even easier! #winning
Add the veggies to scrambled eggs for a simple breakfast, or eat them cold at lunch or for a snack. Use the grilled meat on top of salads, cut into chunks for a snack, or in low carb wraps. There are so many options!
