The Best Sweet Keto Salad Dressing

Did you ever have green salad with fruit on it when you were growing up?

As a child of the 70s and 80s, that just wasn’t a thing for me!

Until I went to college.

There was a restaurant called Mac and Bob’s across the street from my small college owned by two alumni.

I worked in the admissions office as a tour guide starting my sophomore year.

And if we volunteered to work on Saturdays?

We got lunch.

For free.

Because as a poor college student I didn’t get to eat at restaurants other than Hardees…

Bear with me, I promise there’s a point to my story!

One day, Mac and Bob’s introduced a new salad on their menu, a Katie Salad, named after one of their daughters.

The description for the salad was: Marinated grilled chicken, cheddar and Monterey Jack cheese, seasonal fruit and walnuts, served on a bed of spinach with a sweet poppy seed dressing.

Wait.

What?

Who ever heard of putting fruit on a salad with cheese and chicken?

This was something ground breaking (at least it was for me!).

So I ordered it.

And it was so. delicious.

I ended up ordering it almost every Saturday for the next 3 years!

Of course, now, putting fruit or berries on top of a salad is pretty common place.

But that doesn’t make it any less delicious.

Making My Own Sweet Vinaigrette Dressing

My mom loves making a spinach salad with thinly sliced strawberries on top with a sweet vinaigrette dressing.

I started to use her dressing recipe on my own versions of a Katie salad.

And when I started living a sugar-free lifestyle in 2016, one of the first recipes I converted was that dressing.

I still have to credit the Katie Salad for inspiring me to create new kinds of salads.

That’s practically a month of different salads between the two posts!

Sweet Keto Salad Dressing Ingredients

You only need four ingredients to whip up this healthy, sugar free salad dressing!

  • Extra Light Olive Oil
  • Apple Cider Vinegar
  • Water
  • Low Carb Sweetener of your choice

That’s it.

Sometimes I’ll add a little salt and pepper.

Other times I mix in some poppy seeds.

While I usually recommend the rich flavor of extra virgin olive oil, that’s not the best option for this light salad dressing.

This salad dressing is more about highlighting the flavors of the salad ingredients.

So I opt for extra light olive oil instead.

You could also use avocado oil or grapeseed oil.

There are so many different kinds of vinegars available now, but apple cider vinegar is really the best one for this sweet low carb dressing.

It adds a little bit of a fruity flavor.

I prefer using THM Gentle Sweet when I mix up this fast salad dressing.

Why?

Because Gentle Sweet is already powdered which means it dissolves perfectly in the dressing with no grittiness.

If you don’t have that sweetener on hand, or if you prefer using sugar, you can use our Sweetener Conversion Tables to easily figure out the right amount to use.

Simply add all the ingredients to a jar (AnnMarie and I both prefer this Salad Shaker Jar from OXO!), close the top and shake it up!

That’s it.

I usually make a double batch of the recipe because it stores so well.

Just store it at room temperature for up to 2 months.

Now you’re ready to dress all your salads that have fruit on top!

You could even make your very own Katie Salad.

Ingredients

  • 1/4 cup Extra Light Olive Oil
  • 1/4 cup Apple Cider Vinegar
  • 1/4 cup water
  • 2 Tbsp THM Gentle Sweet (or equivalent sweetener*)

Instructions

  1. Add all ingredients to a shaker container and shake to combine.
  2. Store leftover dressing at room temperature for up to 2 months
