Welcome to our Virtual Dinner Club!

We joined up with four of our blogging friends to create a virtual dinner club back at the beginning of 2021.
Every month we choose a new theme and we invite a new guest host to join in our fun.
First, we all create a tablescape for that theme and share all our ideas.

Then, we each share a recipe for the theme to create an entire menu.

What to Serve at a Tropical Cocktail Party
Usually, AnnMarie creates a tablescape for our dinner club and I come up with one new recipe to fit the theme.
But since we loved the cocktail party theme, we decided to be a little extra this month…
AnnMarie set up a gorgeous table with a centerpiece filled with palm fronds and faux orchids.
And a dessert station.
And a cocktail bar!
Then I went a little overboard making food and cocktails…

I also made some spicy mango margaritas and pineapple mojitos.

Is there any cocktail more tropical than a pina colada?
When we went to Antigua and the Dominican Republic , those were the cocktails of choice for everyone in my family!
Our friend Rachel has given the classic recipe a twist with her Pina Colada Martini.

Easy Frozen Mojitos | The Tattered Pew

While my family was enjoying pina coladas, my tropical drink of choice tends to be a keto mojito.
Of course, now I’m thinking I need to step up my mojito game and try our friend Kelly’s recipe for Easy Frozen Mojitos!

It’s no secret that we love charcuterie around here!
So when I heard that our friend Michele was planning to make a Tropical Themed Grazing Board I knew it would be something amazing.
When I saw what she put together, I gasped.
It’s. So. Gorgeous!
She made a pineapple out of cheese!
And a palm tree from a banana and a kiwi.
I mean. How creative can you get? This is truly a work of art!
Easy Homemade Coconut Shrimp | Stacy Ling of Bricks ‘n Blooms

When we hosted our tropical cocktail party at AnnMarie’s, I brought some frozen coconut shrimp that I heated up in the air fryer.
But now that I’ve read our friend Stacy’s recipe and instructions for making Easy Homemade Coconut Shrimp, I’ve got to give them a try!
I love that you can have control over the ingredients, and it’s so much easier to make them from scratch than I realized.

The best part of any cocktail party are the tasty finger food options.
If you put something in a pastry cup, it’s instantly more delicious!
So our friend Jen’s tasty chicken salad recipe looks extra tasty served up in this flaky phyllo cups.
Mini Tropical Fruit Trifles | Simply2Moms

If you know me at all, then you know I’ve got a sweet tooth!
So as much as I love finger foods and cocktails, no party is complete for me without some dessert.
I came up with a fun dessert option for a tropical cocktail party: Mini Tropical Fruit Trifles.
They’ve got a moist keto coconut cake on the bottom, topped with some coconut custard, and then diced tropical fruit and whipped cream.
You can have two of these little cups to make a serving, but one is enough to satisfy.
I’m thinking we need to host more cocktail parties like these, what do you think?!
